Individual Smart Christmas Cakes

Makes 36 mini muffins

150g butter, softened
2 eggs, lightly beaten
cup light desiccated coconut
cup low fat milk
cup plain flour, sifted
cup self raising flour, sifted
1 cup chopped dried pineapple
1 cup chopped dried apricots
cup sultanas
cup 'craisins' or dried cranberries

1. Preheat oven to 160C conventional or 140C fan forced.

2. Beat butter, CSR SMART, eggs, coconut and milk until combined. Fold in flours and fruit.
v3. Spoon into lightly greased mini muffin pans bake for 20-25 minutes or until cooked.
