Makes 36 mini muffins
150g butter, softened
½ cup CSR SMART
2 eggs, lightly beaten
¾ cup light desiccated coconut
½ cup low fat milk
½ cup plain flour, sifted
½ cup self raising flour, sifted
1 cup chopped dried pineapple
1 cup chopped dried apricots
¾ cup sultanas
¼ cup 'craisins' or dried cranberries
1. Preheat oven to 160°C conventional or 140°C fan forced.
2. Beat butter, CSR SMART, eggs, coconut and milk until combined. Fold in flours and fruit.
v3. Spoon into lightly greased mini muffin pans bake for 20-25 minutes or until cooked.
