Air Fryer Spiced Vanilla Butter KANZI® Apples

Cooked in just over ten minutes using an air fryer, this recipe combines the natural sweetness and juiciness of Kanzi apples with warm cinnamon and rich vanilla butter, making the perfect cosy breakfast with granola and yoghurt, or indulgent dessert served with ice cream.

Ingredients
- 2 medium KANZI® apples, skin on, cored, and cut into approximately 6 wedges each
- 1 tbsp vegetable oil
- 1 tsp pure vanilla extract
- 1 tsp ground cinnamon, divided
- 1 tbsp butter, melted
- 1 tbsp maple syrup
Refined coconut oil (no flavour) or canola oil may also be used.
Method
- Toss Kanzi apples in oil, vanilla and 1/2 teaspoon of cinnamon to evenly coat.
- Add Kanzi apples to the air fryer basket, arranging evenly without overlapping to ensure even cooking. Air fry for 5 minutes, shake Kanzi apples in basket to move them around, then air fry for a further 5 minutes, or until soft and tender.
- When Kanzi apples are cooked, transfer to a bowl and toss with butter, maple syrup and remaining 1/2 teaspoon of cinnamon. Serve immediately topped with granola and yoghurt for breakfast, or ice cream for a simple dessert!
Tip: Kanzi apples are great for baking, snacking and slicing with their crunchy and juicy flesh that naturally stays white for longer.
Honey & KANZI® Apple Grilled Cheese

The fresh, tangy crunch of Kanzi apples balanced beautifully with the rich creaminess of brie and the sweetness of honey, transforms a simple toastie into a dish with café-style appeal.

Ingredients
Honey Thyme Butter
- 50g unsalted butter, softened
- 1 tbsp honey
- 1⁄2 tsp fresh thyme leaves
- 1⁄4 tsp flaky salt
Grilled Cheese Sandwiches
- 4 large slices white sourdough
- 1 tbsp plain butter, softened/spreadable
- 2 tbsp honey thyme butter
- 100g brie cheese, cut into 0.5cm slices
- 1 medium KANZI® apple, thinly sliced into rounds (core removed)
- 50g cheddar cheese, thinly sliced
Plain butter may be salted or unsalted, depending on your preference.
Method
- Make the honey thyme butter – In a small bowl, combine the butter, honey, thyme leaves, and salt until smooth and well incorporated. Transfer 2 tbsp of the mixture to a separate bowl for immediate use and roll the remaining butter in plastic wrap for storage in the refrigerator.
- Lay all 4 pieces of sourdough out and lightly spread one side of each with plain butter. (You may need more or less butter depending on the size of your bread.)
- Lay 2 of the pieces of sourdough, buttered side down in a large, heavy bottomed frying pan. Spread 1⁄2 tablespoon of honey thyme butter on the top (unbuttered) side of each slice, then add a few slices of brie, Kanzi apple, and cheddar.
- Spread remaining honey butter on the unbuttered side of the leftover 2 slices of sourdough and place honey side down on top of sandwiches (we want the plain buttered side on the outside as honey butter is more likely to burn in the hot pan).
- Heat the frying pan to medium-low and cook Kanzi apple sandwiches until golden brown on the bottom. Flip carefully and continue to cook until browned on second side with melted cheese (Approx 5 minutes per side).
- Remove from the pan and serve immediately
Tip: The knock-out flavour of a KANZI® comes from its parents - the sweet Gala and the tangy Braeburn. It's the perfect combination for cooking in savoury dishes like this grilled cheese.
Microwave KANZI® Apple Cinnamon Bun Mug Cake

A dessert so delicious, you won't believe it's cooked in just two minutes! This Microwave KANZI® Apple Cinnamon Bun Mug Cake is a treat for the senses - deliciously tangy Kanzi apples, the warmth of cinnamon, and the sweet aroma of brown sugar and vanilla.

Ingredients
- 1⁄2 medium KANZI® apple, thinly sliced into half-moons approximately 5 mm thick
- 3 tbsp (42 g) salted butter (divided, see method)
- 3 tbsp brown sugar (divided)
- Ground cinnamon
- Ground nutmeg
- 1⁄4 cup milk
- 1 tsp pure vanilla extract
- 1⁄3 cup (40 g) plain flour
- 1⁄4 tsp baking powder
- Optional: scoop of vanilla ice cream, to serve
Any dairy or alternative milk may be used.
Method
- To the bottom of a microwave-safe mug, add half of the Kanzi apple slices, 1⁄2 tbsp (7 g) butter, 1⁄2 tbsp brown sugar, and a pinch each of cinnamon and nutmeg. Microwave for 30 seconds to soften the Kanzi apples and create a brown sugar sauce.
- In a separate small microwave-safe bowl, microwave 2 tbsp (28 g) butter in 30s intervals, until melted. Stir in 2 tbsp brown sugar, milk, and vanilla extract until combined. Add the flour, baking powder, and another pinch each of cinnamon and nutmeg. Mix until just smooth and combined, being careful not to overmix. Pour the batter over the Kanzi apples.
- Top the batter with the remaining Kanzi apple slices, then sprinkle with remaining 1⁄2 tbsp brown sugar and a final pinch each of cinnamon and nutmeg. Dot with remaining 1⁄2 tbsp (7 g) butter.
- Microwave for 1 min 30 sec on high. (Please note that all microwaves are different therefore can yield different results. Be careful not to overcook!)
- Top with an optional scoop of vanilla ice cream and serve immediately.

Crispy KANZI® Apple Sheet Tart

This simple KANZI® Apple Sheet Tart is big on flavour but low on effort. With just a handful of ingredients, it brings together sweet, tangy Kanzi apples, warm cinnamon and golden flaky pastry for a delicious treat that's perfect for entertaining or satisfying a sweet craving.

Ingredients
- 1 sheet puff pastry, thawed at room temperature for 5-10 minutes
- 1 medium KANZI® apple, thinly sliced lengthwise with core intact (seeds removed)
- 2 tbsp brown sugar
- 1 egg
- 1 tbsp water (cool or room temperature)
- 2 tbsp demerara sugar
- 1 tbsp cinnamon
- honey, to serve
- icing sugar, to serve
Demerara sugar (otherwise known as turbinado sugar) has a light caramel flavour and large granules which adds lots of delightful crunch! It's commonly found in most supermarkets across Australia; however, raw sugar may be used as a substitute.
Method
- Preheat the oven to 200°C.
- Place the puff pastry onto a large tray lined with baking paper. Prick the puff pastry all over with a fork, leaving a border approximately 2cm wide, to prevent excessive puffing during baking.
- Arrange the Kanzi apple slices on the puff pastry, leaving a border (but don't worry about overlapping too much!) Gently press them in and sprinkle each slice with brown sugar.
- Lightly beat the egg with the water, then brush it over the puff pastry edge. Generously sprinkle edges with demerara sugar and dust the entire tart with cinnamon.
- Bake the tart in the oven for 18 to 22 minutes, or until the puff pastry is golden brown and the Kanzi apples and sugar have caramelised (check from the 15-minute mark to ensure edges are not browning too quickly). If this is the case, move to a lower oven rack.
- Drizzle with honey and dust with icing sugar. Slice and serve immediately.
Tip: The delicious sweet and tangy flavour of Kanzi apples make them perfect for sweet treats and baking, as unlike other tart varieties of apples there's less need for added sugar.
