¾ cup passionfruit pulp (approx 8 passionfruit)
1 tablespoon CSR SMART
2 egg yolks extra
1/3 cup CSR SMART, extra
1½ cups light cream
1 punnet strawberries, for garnish
3 passionfruit, extra for garnish
1. Combine passionfruit and CSR SMART in a saucepan over medium heat. Stir over heat for 2 minutes or until sugar has dissolved. Set aside to cool
2. Combine eggs, extra yolks, extra CSR SMART in a heatproof bowl. Place over a saucepan of simmering water and whisk for 3 minutes or until frothy. The heat helps to increase the volume of the whipped mixture.
3. Remove from heat and beat for a further 3 minutes with an electric mixer until thick and pale. Fold through passionfruit mixture and cream.
4. Line a 26cm x 10cm loaf pan with cling wrap. Pour mixture onto pan. Cover with foil and freeze for 2 hours, stir to distribute the passionfruit. Return to freezer and freeze overnight. Remove from pan and cut into thick slices. Enjoy with strawberries and drizzled with passionfruit pulp.
