Roasted Maple Peaches

Makes/Serves: Serves 6

Ingredients:

•3 large peaches, halved and pitted

•1 tbsp fruity extra virgin olive oil

•2-3 tablespoons pure maple syrup

•1/4 cup granola

•2 tbsp pistachio kernels, roughly chopped

•Whipped thickened cream (Or double cream or yoghurt), to serve


Method:

Preheat oven to 200°C.  Add the halved peaches cut side up to a 1.6L Pyrex Bake n Serve dish. Combine the olive oil and maple syrup in a small bowl, then drizzle over the peaches.


Bake for 25- 30 mins depending on the size of your peaches, then top with the granola and pistachio and bake for a further 3-5 minutes.


Remove from oven, serve warm with cream and enjoy
