Roasted Chicken & Spinach Mashed Potatoes

RECIPES:

Roasted Chicken with Lime and Garlic. Serves 2.

Ingredients:
2 good-size skinless chicken fillets
1 Lime, juiced
cup Chicken Stock
1 Clove Garlic, crushed
Pepper

Method:
Preheat your over to 200C
Place the chicken fillets in a shallow baking pan.
Stir the garlic in with the stock and pour in into the pan.
Pour the lime juice over the chicken and sprinkle with the pepper
Cover with foil and bake till cooked. Remove the chicken for the last 10 minutes and let it brown

You can also add other herbs if you like (rosemary, oregano, basil, etc)

Spinach Mashed Potatoes

Ingredients:
6 Medium Size Desiree Potatoes
cup Skim Milk
2 Cups of Blanched Spinach
1 Tbsp Dried Thyme
1 Tsp Crushed Garlic
2 Tsp Grated Parmesan Cheese (optional)
Salt and Pepper to taste

Method:
Peel, cube and cook the potatoes in salted boiling water until they are very tender.
Drain them and return them to the saucepan.
Mash them with a potato masher and mix in the milk, garlic, pepper and thyme.
When it's nice and smooth, mix in the spinach and cheese if using.
Spoon it onto a serving dish and serve it up when you're ready. You can make this ahead of time so if it goes cold, simply heat it up in the microwave.
