Vegan Cake

If you want to embark on the Pritikan Diet, here is my recipe for a hearty Bean and Veg soup and 'Angie's' Pritikin Cake.

Ingredients

1 & 1/2 cups Wholemeal S.R Flour
1 teaspoon Baking Powder
2 cups Mixed Dried Fruit or 1 can of Weight Watchers Fruit salad
2 cups Orange Juice - Available on line
1 teaspoon Cinnamon - Available on line
1 teaspoon All Spice - Available on line

Method:
  1. Preheat your oven to a 180C.
  2. Lightly spray a bar pan with a non-stick cooking spray and line the base with baking paper.
  3. In a bowl mix the flour, baking powder, spices and orange juice.
  4. Add the fruit and combine it well.
  5. Pour into the ban and level the top with a wet spoon.
  6. Top with some dried apricot halves if you like and bake for about 50 minutes.
  7. Insert a knife to see if it's cooked. It should come out 'dryish'.
  8. Let the cake cool in the pan before removing it.
  9. Slice it only when cooled properly.
  10. Keep refrigerated in an airtight container.
  11. It will last days and it can be eaten cold or warmed in the microwave.
  12. A slice for morning tea is a perfect accompaniment to your coffee.
