Banana Oat & Honey Muffins
'What's the Buzz Day' is Diabetes Australia's-NSW annual fundraising day. It involves the sale of Barnaby Bee merchandise at major retail outlets and selected CBD railway stations.

Monies raised from 'What's the Buzz Day' 2003 will help Diabetes Australia in continuing its vital work in the community assisting all those people living with diabetes.

Ingredients:
  • 250g (8oz) plain flour
  • 1 egg, beaten
  • 75g (2 ½ oz) rolled oats
  • 75g (2 ½ oz) margarine, melted
  • 1 tbsp baking powder
  • 30g (1 oz) soft brown sugar
  • ½ tsp grated nutmeg
  • 175ml (6fl oz) buttermilk
  • 2 medium bananas (mashed)
  • 3 tbsp honey

Steps:
  1. Preheat the oven to 200C/400F/Gas 6. Lightly grease and flour a tray of 12 muffin tins.
  2. Put the flour, oats, baking powder, and nutmeg in a large bowl and mix together well.
  3. Mix together all the remaining ingredients. Use a spoon to fold them through the flour mixture, until combined.
  4. Spoon the mixture into the prepared muffin tins. Bake for about 20 minutes, until the muffins have risen and are golden. Cool in the muffin tins for 10 minutes before serving.

Preparation Tip:
  • If preferred, spoon the mixture into paper muffins cases on and ungreased muffin tray for baking.
