Smoked Tasmanian Atlantic Salmon Pizza With Tomato and Fresh Mozzarella

What you need:
· 100 grams Smoked Tasmanian Atlantic Salmon
· 1 x frozen pizza base
· 3/4 cup tomato pasta sauce
· 2 medium fresh mozzarella, thinly sliced
· Freshly ground black pepper & salt
· 3 tablespoons of light sour cream
· Tablespoon of grated lemon zest
· 2 spring onions, finely chopped
· Tablespoon of fresh dill sprigs

What to do:
· Preheat the oven to 220°C
· Lightly oil a baking tray and cook pizza base for 8 minutes until light brown
· Prepare topping ingredients
· Spread tomato pasta sauce over pizza and arrange slices of mozzarella over top of tomato sauce
· Distribute Smoked Salmon over the cheese
· Mix sour cream and lemon zest
· Carefully dot over top of Salmon
· Sprinkle with chopped spring onions and sprigs of dill
· Bake for 15-20 minutes until the cheese has melted and topping lightly browned
· Cut into wedges and serve with salad



Mexican Tasmanian Atlantic Salmon with Avocado Salsa

What you need:
· 800 grams of Tasmanian Atlantic Salmon fillet, skinned and cut into small chunks
· Teaspoon of mild Mexican chilli spice
· 1/2 teaspoon of cinnamon
· Teaspoon extra virgin olive oil

What you need for the salsa:
· 1 firm ripe avocado, peeled & diced
· 1 tomato, diced
· 1 spring onion diced
· Tablespoon of lemon juice
· Baby rocket leaves to serve
· 4 x 16cm Mexican white bread

What to do:
· Mix salsa ingredients together and warm Mexican white bread as per packet instructions
· Mix spices with a little oil
· Rub over fillets
· Cook Salmon over medium heat for 3-4 minutes each side until opaque
· Serve Salmon, salsa and rocket wrapped inside the tortilla
