Chilli Calypso Salsa
Serves 4 as an accompaniment

Ingredients:
1 large Calypso™ mango - diced
Juice & zest of 2 fresh limes
2 red chillies - deseeded and finely chopped
½ tablespoon fish sauce
Bunch of fresh coriander, chopped

Directions:
1. Mix all ingredients together in a bowl.
2. Allow to stand in the refrigerator for 30 minutes to allow the flavours to develop.
3. Will keep in an airtight container in the refrigerator for 1-2 days.
