Chifley Hotel Wollongong is excited to launch its "Big Kids in the Kitchen" Series, an interactive series of cooking sessions set in Wollongong's newest kitchen, C Grill Restaurant. At the helm of the kitchen series is Executive Chef, Peter Washbourne, who inspired C Grill's cuisine from the start with his passion for prime meat, fresh local produce and mouthwatering desserts.

Teaming up with executive chefs from a variety of culinary backgrounds, the series is designed around one theme a month in form of interactive classes.

One Saturday a month, patrons are invited to get involved, ask questions, discuss and learn with a passionate professional whilst putting the gained knowledge into practice right there and then, creating a grazing lunch which is then to be enjoyed with matching alcoholic beverages.

From learning secrets of selecting quality meat and preparing marination's, getting some insights on the cultivation growth, processing, pressing and tasting of the variety of oils over experiencing master artisian and chocolatier, Lyn Graham, from Kiama Cacao when sharing her passion and knowledge of the indulgent Belgium Chocolate... Patrons will leave the kitchen savvy, enthusiastic and certainly satisfied.

26 March 2011 - Chocolate Treats
Master artisian and chocolatier , Lyn Graham, from Kiama Cacao will share her passion and knowledge of the indulgent Belgium Chocolate. Lyn's chocolates will not only appeal to your palate, but also your sense of culinary adventure. A "hands on" class not to be missed on the making of Easter eggs and truffles. A great Easter treat.

30 April 2011 - Local Produce and Biodiversity
Bush Goddess Pennie Scott, from Canberra, will introduce subsistence farming and locally sourced products from local and independent suppliers. Pennie's passion about healthy soils, nutritious foods and farming systems which enhance biodiversity will be sure to inspire! Tips and tricks to use at home with your family will be shared.

21 May 2011 - Delightful Oils
Bruce Eglington from the multi-award winning Pukara Oils will talk on the cultivation, growth, processing, pressing and tasting of the varieties of oils and their individual characteristics. This Estate produces distinctive, sophisticated and flavoursome Australian Extra Virgin Olive Oils and Balsamic Vinegars of the highest quality, so this session is a must! Recipes for the day will include those containing Pukara Olive Oils and products.

18 June 2011 - Game, Sausages, and Charcutireie
Harry Stevenson, CIT lecturer and ex-chef of award winning restaurant 'The Grazing' in Gundaroo, is a master expert in game, meat and the sophisticated process involved in the end product. He will give an interactive workshop on products used, sausage making techniques, seasoning and cooking game. This talk is not to be missed if you are a meat lover!

16 July 2011 - Truffle Time and Risottos of the World
Executive Chef at Chifley Wollongong, Peter Washbourne, will introduce the Australian truffle and discuss its cultivation, processing, storage and cooking uses. An interactive class on risotto flavours and cooking techniques will follow, whilst discussing its place on any menu!

20 August 2011 - Bollywood Pantry
Chef Saju Rajappan, a native of Goa and Kerala regions of India, will demonstrate and discuss his cultural heritage on Indian family cooking and dishes that can easily be replicated for that dinner party or special occasion. A brilliant interactive class on pastes, marination, curries, vegetarian recipes and the basic breads and pickles. Learn to cook the Indian dishes which you love the most!

17 September 2011 - Beers and Wines of the World
The Chifley Wollongong's very own Food and Beverage Manager, Shin Chin, will offer his extensive knowledge of wines on offer from around the world with food pairing and tasting. This will be followed by an interactive tasting of leading beers and a discussion on their use in cooking recipes. Step into Spring with a class on food and wine matching!

15 October 2011 - Lets Talk Cheese
Renowned cheese connoisseur, Ian Feary of 'The Fearocious Feed', will demonstrate and offer tastings of the various varieties of delicious cheeses, how to select them, their eating quality as well as their use in a range of recipes. This is sure to be a great class on the world of cheeses, their individual taste and how to present a great cheese platter!

19 November 2011 - Tapas! Tapas! Tapas!
Live and learn the great Spanish tradition of tapas! Discuss the culture behind the trend of tapas, tasting of the hams, tapas menu items and the cooking of 5 easy recipes. Creating easy to do menu items for those Christmas drinks and lazy Sunday afternoon items that can be done ahead of time. Not to be missed!

3 December 2011 - Festive Fare
A great cooking lesson on that Festive lunch with easy menu items to cook in advance and enjoy on Christmas Day. Great recipes for a range of meats, salads, cakes and those little white Christmas treats. Stuck for ideas this Christmas?
