Strawberry Coconut Ice Pops

What's not to love about a dairy free dessert? Made with Barker's NZ Luscious Strawberry Sauce, these ice pops are the perfect end to a hot day and can be made in advance. Make them with the kids for the ultimate treat.

Serves:6
Active time:5 minutes
Setting:4-6 hours
Equipment: ice pop mould (6), whisk

Ingredients
1 400ml can coconut cream
1/3 cup Barker's NZ Luscious Strawberry Sauce
250 grams fresh strawberries, chopped

Method:
•Shake the can of coconut cream thoroughly before opening.
•Pour into a bowl and whip until the solids and liquid combine to make a smooth mix.
•Add 1 tbsp of the Barker's NZ Luscious Strawberry Sauce and whisk through the coconut cream.
•Place the chopped strawberries into your ice pop mould.
•Cover with the coconut cream mix. Distribute the remaining sauce between the moulds and very gently swirl through.
•Freeze until solid: 4-6 hours.
