This show stopping dessert is easy to put together and tastes amazing thanks to the decadent taste of Barker's NZ Rich Chocolate Sauce. Make it in advance for your next special occasion.

Setting:6-8 hours

9 cups of vanilla ice cream of your choosing-approx. 3 litres
½ cup Barker's NZ Rich Chocolate dessert sauce
125 grams fresh raspberries
½cup grated chocolate
Extra: raspberries and Barker's NZ Rich Chocolate Sauce for decorating
Equipment: loaf pan and blender

•Combine 3 cups of ice cream and ½ cup of Barker's NZ Rich Chocolate Sauce in the bowl of a blender or food processor, blitz until well combined.
•Line your loaf pan with cling film, leaving an overhang for easy removal.
•Pour in the chocolate mix and top with grated chocolate.
•Allow to set for 2-3 hours.
•Place three cups of vanilla ice cream into your blender and then pour on top of the chocolate layer. Allow to set for 2-3 hours
.•Combine the raspberries and remaining ice cream in a blender and blitz until smooth.
•Pour into the loaf pan.
•Allow to set until completely solid.
•Remove from the loaf pan using the cling film to get it out.
•Remove the cling film.
•Top with extra Barker's NZ Rich Chocolate Dessert sauce and decorate the plate with raspberries.
