Pancake Blueberry Christmas Tree

Pancake Blueberry Christmas Tree

It's not a secret that life is getting busier and busier - especially for parents.
Recent research among 2,000 working parents suggested they complete an average of 43 tasks before they even get to the office.

This means that the average working mum or dad leaps up at 6.01am, with a yawn-inducing one-third of them getting up before 5:30am. The daily to-do list includes getting the kids ready, and a large amount of time is spent on making breakfasts, lunches and morning teas for everyone.

Luckily, Australian Blueberries have thought of a few 10-second snack hacks to help you get out the door faster, or snooze that alarm longer. Since they're Australian grown and packed full of antioxidants and other goodies, these snacks will make your schedule, body and country happy!

Ingredients
1 cup flour
1 egg
1 1/2 cups milk
1 tsp butter
2 punnets fresh Australian blueberries
2 tbs hazelnut spread
1 punnet raspberries
1 punnet strawberries

Method
Whisk together the flour, egg and milk in a large bowl.
Heat a pancake pan on medium heat, and melt the butter evenly to coat the bottom of the pan. Gently spoon in 1/4 cup of the pancake mixture onto the pan. Wait 45 seconds before flipping the pancake. Cook for another 45 seconds before removing from the pan.
Fold your pancake in half, and then in half again, to get a triangle shape on a plate.
Decorate your pancake tree by drizzaling hazelnut spread over the pancake. Evenly line the fresh blueberries down from the top of the triangle to the bottom, to form the tree's tinsel.
Slice a strawberry and lay the slices at the bottom for the tree's stump.
Top the tree with a fresh raspberry, and enjoy!
