A deliciously zesty salsa is a great topping to have on hand in summer whether your adding it to salmon or chicken for dinner or even having for brekkie on eggs and sourdough. Mix-a-Mato® tomatoes are great for this as each variety of tomato in the punnet brings different depth of flavour to the salsa - yum.

1 middle piece of salmon, skin off
Salt and pepper, to taste
Olive oil, for cooking
Cooked rice, for serving.
Mix-a-mato® Salsa: 1 cup Mix-a-Mato® tomatoes, quartered
1 spring onion stalk, finely sliced
1 tbsp fresh coriander, roughly chopped
1 small garlic clove, sliced
1/2 tbsp olive oil
1 tbsp. lemon juice
Pinch of salt
Coat salmon in a pinch of salt and pepper on both sides.
Heat a small non-stick pan with a splash of olive oil over a medium high heat. Cook salmon on both sides for 3-4 minutes or until cooked to your liking.
Meanwhile to create the Mix-a-mato® salsa, add fresh tomatoes (a blend of the varieties from the Mix-a-Mato® punnet for different flavours), spring onion, coriander, garlic, olive oil, lemon juice and a pinch of salt into a bowl and mix well. Taste and season accordingly.
Once salmon is cooked, place on a bed of rice and top with the Mix-a-Mato® salsa.

Herby salsas – Light herbs like coriander, basil and parsley are in abundance in summer and they pair perfectly with tomatoes to add zesty summer flavours to your favourite meals. I love prepping a Mixa-Mato® and herb salsa so that I have it handy to top grilled salmon for dinner (I live on this dish), on sourdough for lunch, or even on eggs at brekkie.
Roasted and ready - It may be getting warmer but that doesn't mean you have to give up on your roast veggies. Roasting a tray of vegetables is one of the easiest things to do, when it comes to meal prep. For a summer switch, throw roast veggies into a spinach salad with a light dressing and some crumbled feta - perfect for lunch! My big tip for roast vegetables is to always add a handful of Mix-amato® tomatoes on top - they burst with flavour when roasting and stop the veggies from drying out.
Salad staples - Simple salads are a winning summer dish to add to your meal rotation as they take hardly any prep time! My two minute, go-to is Mix-a-Mato® tomatoes cut in half and mixed with mozzarella cheese, basil and a drizzle of balsamic glaze. Done!
