Recipe from Louise Edney of Nourishing Nosh
Serves 3 - 4
1 tablespoon (20ml) Chia seeds
225ml freshly squeezed orange juice (2 oranges)
60ml Blood Orange Juice (or plain if not available)
250g ripe Ruby Rise Papaya, grated
100g Coyo coconut yoghurt
¾ cup cubed Papaya
Handful chopped strawberries
3 tablespoons Pepitas (Pumpkin seeds)
3 tablespoons chopped roasted almonds
Extra dollop of yoghurt
The night before serving, mix the oats, chia seeds, orange juices and water together in a bowl.
Stir well, cover. Sit on the bench top overnight.
In the morning, grate the papaya into the bowl with the oats. Stir in the yoghurt.
Prepare the fruit.
Divide muesli between the bowls, top with fruit, a dollop of yoghurt and a sprinkle of seeds and nuts.
