These melt-in-your-mouth gluten free chocolate truffles are an easy yet delicious gift idea.
125g milk chocolate
3/4 cup CSR Soft Icing Mixture
100g almond meal
4 tbs Baileys Irish Cream
1/2 cup cocoa powder, to decorate
Place chocolate and butter in a microwave safe bowl. Cook on medium in 30 second bursts until melted (approximately 2 mins)
Stir in icing mixture, almond meal and Baileys. Beat until smooth. Refrigerate for 30 min or until firm.
Roll tablespoonfuls of the mixture into balls. Place on baking paper. Roll in cocoa powder then refrigerate until required.
