Two of the most popular pastes in the Maharajah's Choice range are the Butter Chicken curry and the Vindaloo. Vindaloo originates from the Goan region in India. It is a hot and sour curry traditionally prepared with pork or seafood. In contrast, the Butter Chicken curry is a rich and spicy dish, typical cuisine of the Moguls, whose cooking and conquering swept across the north of the country 600 years ago.
Maharajah's Choice curry pastes have such wonderful, strong flavour because they're made from the finest ingredients available. Plus, the curry is as healthy and flexible as you make it ditch the cream in the Butter Chicken for low-fat yoghurt or opt instead for a tomato base or a dry curry. Dumaloo, Baby potatoes cooked in a creamy spicy sauceIngredients:
500g potatoes cubed
1 large onion
1 cup tinned tomatoes - chopped
1 small carton natural yoghurt
½ cup cream
mixed Spices (turmeric, cardamom, chilli, black pepper, cinnamon, cloves), coriander leaves for garnishMethod:
1. Peel potatoes and cut into 3cm cubes. Soak in salted water for 2 hours.
2. Dry potatoes well with cloth.
3. Heat oil in wok and deep fry the potatoes until golden brown. Drain and set aside.
4. Heat oil or ghee in pan and fry onion with all the mixed spices until golden.
5. Stir in tomatoes, yogurt and season with salt.
6. Add potatoes and hot water to cover.
7. Cook in a moderate oven for 20-30 minutes
8. Stir through cream prior to serving and garnish with coriander leaves
