Enter: Byrdi - the first Australian cocktail bar and latest venture by globally acclaimed bar operators, Luke Whearty & Aki Nishikura, the masterminds behind Singapore's awardwinning bar, Operation Dagger.
Renowned for consistently making the World's 50 Best Bars List and known for distilling locally foraged botanicals and even fermenting their own wines from seasonal fruits and vegetables, a little birdie told us we're right to expect great things.
Byrdi's offering will focus on locally sourced ingredients with a seasonal turn around as tight as two weeks, resulting in an ever-evolving and enchanting cocktail menu set to light up the taste buds.
"I am really looking forward to showcasing the amazing produce that we are sourcing from local farmers and shining a light on the hard work Australian farmers are doing and this incredible part of the world we call home", says Whearty.
"Through various elements in both our menu and venue fit-out, guests can expect an experience that reflects our unique environment and local terroir. Hence, a rotating menu full of local botanicals and seasonal produce."
A cocktail bar, a wine bar, a cafe or a restaurant; Byrdi seeks to blur the lines with its unique offering and boast an eccentric and non-conventional atmosphere. Comparatively to Operation Dagger's industrial and edgy appeal, Byrdi will convey a sense of vibrancy through natural lighting and locally sourced sustainable materials such as bluestone and coconut husk flooring.
Already established with a series of food retailers, musical performances and art installations, ELLA pushes Melbourne's cultural and culinary boundaries even further with the launch of Byrdi. The 40 seat venue will be a heavenly addition to the ELLA family, playing up a hyper-aromatic dining experience and taste sensation.
