2 scoops GO Healthy GO Collagen Powder NZ Blackcurrant
1/2 ripe banana, mashed
2 eggs
1/3 cup milk kefir OR runny yoghurt
1 tps vanilla
1tbsp maple syrup
1/2 cup milk of choice
1/2 cup rolled oats
1 cup whole spelt flour
1ts chia seeds
1.2 tsp bicarb soda
Pinch of salt
1/2 cup frozen berries
Method
In a bowl combine the mashed banana, eggs, milk kefir, vanilla, maple syrup and milk and whisk to combine.
Add all of the dry ingredients into the bowl and fold together well until it resembles a smooth batter.
Heat a small amount of olive oil or butter in a non-stick frying pan over a medium heat.
Pour in 1/3 cup of the batter spreading to your desired pancake size, drop on a few of the frozen berries then allow to cook for 2-3 minutes or until bubbles form, flip and cook for another 1-2 minutes or until cooked through.
Continue until all the batter has been used, serve with maple syrup and extra fresh berries
