Want to cool down on a hot day with a delicious pitcher of watermelon sangria? Try Chyka Keebaugh's gorgeous new watermelon sangria which tastes as good as it looks! Chyka says: "In summer, having a pitcher of any sort of cocktail makes people feel excited, and using everything we have available to us here in summer is what makes this even more beautiful. It tastes delicious, looks gorgeous and is fun to decorate, and is a perfect accompaniment to Fromager d'Affinois cheeses."

Serves: 8-10

INGREDIENTS:

To serve:
· 1 generous wedge of Fromager d'Affinois Le Fromager (approx. 250g)
· 1 generous wedge of Fromager d'Affinois Truffles (approx. 250g)
· 2 cups of fresh watermelon, sliced
· 2 limes, zested
· 1 bottle rosé
· 1 bottle of rosé champagne
· ½ cup of St Germain (elderflower liquor)
· Fresh mint, lime wedges and sliced watermelon for garnish

METHOD:
1. Blend 2 cups of sliced watermelon (no skin) in a blender until smooth, strain through a sieve into a jug.
2. Add the rosé, St Germain, and lime zest and mix well. Place in the fridge to chill.

To serve:
Add the rosé champagne and stir. Pour sangria into glasses over ice and garnish with watermelon and lime wedge plus a sprig of mint.


Serve with a platter of room temperature Fromager d'Affinois Le Fromager and Fromager d'Affinois Truffles and crackers.
