· 250 grams smoked Tasmanian Atlantic Salmon
· 3 large eggs
· 2 teaspoons of cornflour
· 2 teaspoons of water
· Tablespoons of finely chopped chives
· Salt, a pinch
· Light olive oil
· Bunch of rocket, washed and trimmed
· 1 large carrot, peeled and grated
· 1/4 cup tartare sauce
1. Whisk eggs together in a bowl.
2. Mix cornflour and water.
3. Stir into eggs with chives and salt.
4. Lightly oil a small non-stick frying pan over high heat and spoon in 2-3 tablespoons of egg mixture to thinly cover the base.
5. Cook over medium heat until set.
6. Slide out and cook the rest of the mixture until you have 4 omelettes.
7. Spread tartare sauce over omelettes on one side.
8. Stir into eggs with chives and salt.
9. Place slices of Smoked Salmon over third of the omelette and place some grated carrot and stalks of rocket.
10. Roll up and serve.
