Lamb Shank Recipe

4 lamb shanks (adjust size to your allowance, excluding bone)
Flour, for dusting
1 glass red wine
1-2 cups tomato sugo
1 cup battuto
Salt & pepper
2 tspn slime
1 eggplant
1 packet frozen spinach leaves

1 carrot
1 stick of celery
1 brown onion
1 spring onion
1 leek

Slime is a pre-prepared mixture of garlic, battuto and vegetable oil that is used in many Italian dishes, in particular added to sauces and marinades. It will keep in a jar in the fridge for months.

Preheat oven to 240C (465F).
For the Battuto simply blend ingredients together well in a blender or food processor.
Lightly dust the shanks with flour then gently brown in a frying pan with oil. Place in an oven dish with the red wine, tomato sugo, battuto, salt, pepper and slime. Cover with foil. Place in oven and bake for about 90 minutes, until done to your liking. Panfry eggplant and spinach leaves. Serve lamb shanks on top.
