Cajun Patties with Avocado Salsa

2 Cups of Cooked Red Kidney Beans
1 Large Potato cut into small cubes
½ Sweet Potato cut into small cubes
1 Large Carrot cut into small Cubes
1 Bunch of Chives
1 Tablespoon of Chopped up Fresh Coriander
2 Tablespoons of Tomato Paste
1 Tablespoon Cajun Spice Mix

Roughly mash up cooked red kidney beans with a potato masher.
Steam the potato, carrot and sweet potato until tender and leave to cool.
Add the steamed vegetables to the mashed up beans and mix together.
Add chopped up chives, coriander, tomato paste and Cajun spice and mix thoroughly.
Roll into balls and place them onto a grease lined tray and flatten the balls into patties.
Bake in oven on 180 for 15 minutes. Serve with salsa on top of each pattie.


1 Avocado
2 Roma Tomatoes
1 Small Red Onion

Dice the above ingredients very fine and mix together. Place a tablespoon of the salsa on top of each Cajun Pattie before serving.
