350g jar apricot conserve
1 cup sweet sherry
100g slivered almonds
1 tsp ground cinnamon
6kg Coles Finest Full Leg Ham
1 Place apricot conserve, sherry, almonds, cinnamon and ½ cup of water into a small saucepan and bring to boil. Reduce heat to low and simmer for 5 minutes.
2 Preheat oven to 160°C or 140°C fan. Remove the rind (see step 1, below), and score the fat beneath (see step 2).
3 Transfer ham to a large baking pan. Glaze (see step 3) and bake for 1½ hrs, basting every 30 mins. (Cover with foil after 1 hr if it starts to colour too much.)
Three simple steps to preparing ham:
1. Cut rind from around shank, 10cm from knuckle. Remove rind in one piece from base of ham.
2. Using a small sharp knife, score the fat on the ham in a diamond pattern.
3. Using a pastry brush, glaze the ham liberally. Reserve remaining glaze for basting.
