4 slices Helga's Soy & Toasted Sesame Lower Carb bread
1 tsp. spreads
150g of lean ham off the bone, finely sliced
1 small onion
1 small zucchini
1 tablespoon self-raising flour
2 teaspoons finely chopped parsley
½ cup grated fat-reduced cheese
Cut the crusts off the Lower Carb bread. Spread Lower Carb bread lightly with spreads.
Arrange, spread side up, on the bottom of a shallow dish.
Chop ham. Grate onion and zucchini. Combine all in a bowl.
Lightly beat eggs. Add eggs, flour, parsley and cheese to vegetables. Stir well.
Spoon mixture over bread. Cover with plastic wrap.
Microwave on medium-high for 8 minutes or baked in moderate oven (160ºC) for 15-20 minutes until browned.
