Shepard Avocado Prawn Bites

Cooking time: 5 minutes
Ingredients1 Shepard Avocado, roughly chopped
2 tablespoons egg mayonnaise
1/2 teaspoon wasabi paste
16 cooked prawns, peeled and tails left on
8 slices pumpernickel bread cut into 4cm rounds
8 thick slices of continental cucumber
Pickled ginger slices, dill sprigs and salmon roe to garnish
Method1.Mash together the Shepard Avocado, wasabi and mayonnaise.
2.On each cucumber or pumpernickel round, place a prawn with a dollop of Shepard Avocado mix.
3.Garnish with ginger slices, dill or salmon roe.
