While the cooking prowess of AFL stars is often thought to be limited by the strict diets and demanding schedules of a professional athlete, a new online cooking series created Obela hommus and the afl.com.au has shown a different side to some of the biggest names in the AFL.
Marc loves this dish as Obela's hommus ramps up the flavour and gives an added kick to Spanakopita, Hommus is a natural addition the savoury Greek pastry!
Serves: 9 people
220g Obela Savoury Garlic Hommus
1 x cup of Ricotta
1 x teaspoon Z'ata
1 x teaspoon Salt
1 x teaspoon Chilli Flake
Pinch of freshly grated Nutmeg
1 x large Egg, whisked
1/2 packet of Filo Pastry sheet
Unsalted Butter melted
PREHEAT oven to 180°C
FILLING; remove any excess water from the Spinach. Fold in the Obela Hommus, Ricotta, Spices and Egg. Mix well until combined and set aside
TO ASSEMBLE; brush melted butter on the bottom and sides of a 20x20cm pan. Layer a sheet of Filo Pastry and brush with more butter, repeating this step about 10-12 times until you get a good base. Place the filling on the buttered sheets evenly. Keep layering phyllo sheets brushed with butter until you reach the top of the pan.
CUT into nine even squares BEFORE baking - if you don't, it'll be impossible to cut the delicate sheets without destroying them.
BAKE for an hour to an hour and 25 minutes until completely golden brown.
COOL for ten minutes before serving.
