Gourmet Garden Spicy Beef Piccadillo with Garlic and Oregano


Serves 4

Ingredients

1 large onion, finely chopped
2 pork and fennel sausages
500g Macro Organic Premium Beef Mince
50g Woolworths Select Traditional Tomato Paste
2 teaspoons Gourmet Garden Garlic
1 tablespoon Gourmet Garden Mild Chilli
1 teaspoon Gourmet Garden Oregano
½ teaspoon ground cumin
1 x 400g can Woolworths Select Diced Italian Tomatoes
3 spring onions, chopped
Salt and black pepper
3 tablespoons Gourmet Garden Parsley


Method

Step 1 – Heat 2 tablespoon olive oil in a non-stick pan and sauté the onion until lightly browned. Step 2 – Slit the sausages and remove the meat. Add sausage meat and beef mince to the pan and sauté until well browned, breaking up lumps with a spatula or a wooden spoon.

Step 3 - Add tomato paste, garlic, chilli, oregano and cumin and sauté briefly. Add canned tomatoes and ½ cup water. Bring to the boil, reduce heat and summer for about 12 minutes, stirring occasionally.

Step 4 – Stir in spring onion and check for salt and pepper. Simmer a further 1-2 minutes, and stir in parsley.

Note: Piccadillo is a versatile filling for tacos, burritos, pastries and pies and can be served as a simple meal over toast, mashed potato or pasta, and as a family meal with beans, salad and rice.
