Coconut Ice Bliss Ball

Nothing says I care like a handmade or a hand 'baked' gift. With Valentine's Day just around the corner, we're sharing this simple yet sweet McKenzie's recipe for you to bake for your nearest and dearest.

Coconut and raspberry are a match made in heaven in McKenzie's Coconut Ice Bliss Ball. Easy to make and big of flavour, these balls of bliss are the perfect treat to surprise a loved one with this Valentines' Day.

Preparation time: 10 minutes
Makes: 20

3 cups McKenzie's Desiccated Coconut
1 cup icing sugar, sifted
½ cup coconut cream
1 tbsp maple syrup
¼ cup fresh raspberries, smashed
½ cup McKenzie's Desiccated coconut, for rolling
3 drops red food colouring, optional

Combine coconut and icing sugar in a large mixing bowl. Make a well in the centre and add coconut cream, maple syrup, raspberries and food colouring if using. Mix well.
Form tablespoon measures into balls and roll in additional coconut. Refrigerate in a sealed container for up to 5 days.
