Brekky Burrito with Spicy Chilli Bacon

Hangover Cure

With the silly season in full swing, Australians are set to experience some serious hangovers over the next few months. While no one likes feeling the remnants of a big night, often it's an unavoidable part of the morning after. Hangover Hero, the expert in on-demand hangover cures, has partnered with Primo, Australia's favourite bacon brand, to bring Aussies mouth-watering recipes perfect to cure even the most extreme party aftermath.


Ingredients
2 x rashers of Primo Premium Selections Spicy Chilli Bacon, chopped
1 x avocado, diced
1 x tomato, seeded, flesh diced
1 x small red onion, finely diced
2 x free range eggs
½ x small green capsicum
½ x cup of grated cheese
1 x lime
1 x dash of favourite hot sauce
1 x large corn tortilla
1 x tbs. butter

Method
Make the guacamole – add the avocado to a bowl and mix in diced capsicum, tomato, pinch of salt, half lime juice, half a diced onion, pinch of pepper, small bunch of finely chopped coriander. Mash with a fork.
Whisk the eggs in a bowl, season with salt and pepper and a dash of hot sauce.
Slice the Primo Premium Selections Spicy Chilli Bacon into 2cm slices.
Warm your tortilla in the oven on low heat.
Heat a pan with some butter, and once hot, add the bacon and whisked eggs until cooked.
Take out your warm tortilla, place all ingredients on tortilla and roll up into a burrito.
