Dany Karam, Executive Chef at the recently opened, Bar Tikram, has shared a recipe of one of the venue's new dishes, a Fattoush salad, for fans of Middle Eastern fare to recreate at home.
This Fattoush Salad is a Middle Eastern favourite; fresh, easy to make and full of flavour. Perfect to accompany any protein or be a hero on its own, the Fattoush Salad is a healthy option for lunch at home.
Serves: 2 – 4 (depending on serving as side dish or main)
Preparation time: 30 minutes
Ingredients
4 x tomatoes
½ cucumber
2 x cos lettuce bunch
1 x spring onion
1 x capsicum
1 x shallot
2 x radish sliced
1 x pomegranate to garnish
Parsley to garnish
2 slices of pita bread to serve
Method
Cut the tomatoes in half then in 3.
Pick the cos lettuce leaves, clean, wash and then chop.
Thinly chop the cucumber, capsicum, shallot, spring onion and radish.
Mix all the ingredients with the Fattoush dressing and garnish with fresh pomegranate and parsley
Serve with the crispy pita bread on the top.
Fattoush Dressing
Ingredients
1 gr crushed garlic
8 gr salt
40 ml olive oil
10 ml vinegar
170 ml lemon juice
25 ml of water
15 ml pomegranate molasses
3 gr Sumac
Method
Dissolve the salt into the lemon juice, then add the pomegranate molasses, olive oil, add all the remaining ingredients and mix all together.

Method
Cut the pita bread into thin strips then deep fry it at 175°C until golden brown colour.
Season with salt and sumac.
